Thawing methods compared

  • Refrigerator — safest method. About 24 hours per 4–5 lb. A 16 lb turkey needs about 4 days. Place on a tray to catch drips.
  • Cold water — faster but requires attention. About 30 min per lb, changing water every 30 min. Cook immediately after.
  • Never thaw at room temperature — the exterior enters the danger zone (40–140°F) while the center is still frozen.
  • Once thawed in the fridge, the turkey can stay there 1–2 more days before cooking.
Questions

Turkey Thawing Calculator FAQ

How many days does it take to thaw a turkey in the fridge?

Approximately 1 day (24 hours) for every 4–5 pounds. A 16-pound turkey needs about 3½–4 days in the refrigerator. Always place it on a tray to catch drips.

Can I thaw a turkey in cold water?

Yes — plan roughly 30 minutes per pound in cold tap water, changing the water every 30 minutes. A 16-pound bird takes about 8 hours. Cook immediately after thawing; do not refreeze.

Can I cook a turkey from frozen?

Yes, but it takes about 50% longer than a fully thawed bird and the USDA recommends against it for stuffed turkeys. Always verify 165°F with a thermometer.
