How many turkeys for 50 guests?

Plan roughly 3–4 birds of 14–16 lb each for a traditional buffet spread. For plated service where portions are more controlled, 3 birds may suffice. Always add one extra bird for buffer.

How far ahead can I cook turkeys for a large event?

Cook up to 1 day ahead. Cool quickly, carve, and store in airtight containers in the fridge. Reheat gently with stock in covered pans at 300°F until 165°F. Fresh-cooked is always best, but this is safe and common for catering.

What's the best way to keep turkey warm for a buffet?

Chafing dishes with a little warm stock in the pan keep carved turkey moist. Electric warming trays also work. Turkey held above 140°F stays food-safe for up to 4 hours; discard after that.
