How to spatchcock a turkey

  • Remove the backbone with sturdy kitchen shears — cut along both sides from tail to neck.
  • Flip the bird breast-side up and press firmly on the breastbone until you hear it crack and the bird lies flat.
  • Tuck the wing tips behind the breast and position the legs so the bird is as flat as possible.
  • Season, place on a wire rack over a sheet pan, and roast. The bird cooks evenly because it's all one thickness.
Questions

Spatchcock Turkey Time Calculator FAQ

How much faster does a spatchcocked turkey cook?

A spatchcocked turkey cooks about 25–30% faster than a standard roast — roughly 11–13 minutes per pound at 425°F vs. 15 minutes per pound for a standard 325°F roast.

What's the best temperature for spatchcock turkey?

Higher heat works best — 425–450°F is ideal. The flattened bird cooks evenly at high heat, producing crispy skin and juicy meat. A 12–14 lb spatchcocked bird finishes in about 80–90 minutes.

Do I need special tools to spatchcock a turkey?

Just sturdy kitchen shears. Poultry shears are ideal, but heavy-duty household shears work. You may also want a rimmed sheet pan and a wire rack — no roasting pan needed.
