Turkey Cooking Time by Weight, Method, and Stuffing

Plan turkey roasting time by weight and method, understand stuffed versus unstuffed timing, and finish safely with thermometer checks.

At 325°F, use about 15 minutes per pound for an unstuffed turkey and about 18.5 minutes per pound for a stuffed turkey as planning estimates. Start checking early and use 165°F (74°C), not the clock, as the final safety decision.

What Changes Cooking Time

Starting temperature, oven calibration, roasting pan, bird shape, stuffing, airflow, and door opening all affect the finish. Convection settings and spatchcocking can shorten the schedule. Cooking from frozen can lengthen it substantially.

Stuffed Turkey

Stuffing slows heat transfer and the center of the stuffing must also reach 165°F. Cooking stuffing separately is simpler and usually gives you better control over both the turkey and the stuffing texture.

When to Check Temperature

Begin checking before the estimated finish. Measure the thickest breast, innermost thigh, innermost wing, and stuffing center when applicable. Avoid bone, which can distort readings.

Build the Serving Schedule

Work backward from serving time. Add carving, a 20–45 minute rest, cooking time, preheating, seasoning, and refrigerator preparation. A turkey that finishes early can rest; one that starts late is difficult to accelerate safely.
